烤马铃薯皮 Loaded Nachos Potato Skins

【材料】
美国马铃薯6大粒(洗净煮熟)
【馅料】
牛油2-3汤匙、盐和胡椒粉适量、奶油2-3汤匙、黑胡椒香肠2条、 cheddar芝士茸80克
【顶料】
牛油果1粒、樱桃番茄适量、酸奶油和切丁芝士适量
额外橄榄油涂马铃薯
【做法】
1. 将樱桃番茄切小粒;黑胡椒香肠切丁炒熟备用。(图1-2)
2. 牛油果取肉切丁淋柠檬汁备用。(图3)
3. 把煮熟的马铃薯一开二,然后小心挖出马铃薯肉,不可破坏皮的完整。(图4)
4. 在马铃薯皮涂橄榄油,然后撒上少许盐,放入预热至180°C的烤炉里烤约25分钟至脆。
5. 另外把马铃薯肉捣烂,与牛油,盐,胡椒粉及奶油混合。(图5)
6. 在烤马铃薯皮中心填入马铃薯泥,撒入炒过的香肠和芝士,然后再入烤炉烤5分钟至芝士溶
解。(图6-7)
7. 取出马铃薯皮后,马上撒入芝士粒、牛油果、番茄及酸奶油即可享用。(图8)

【Ingredients】
6 large russets(scrubbed & boiled till tender)
【Filling Ingredients】
2-3 tbsp butter, salt & pepper to taste, 2-3 tbsp cream, 2 large black pepper sausages, 80g grated cheddar cheese
【Topping Ingredients】
1 avocado, baby tomatoes, sour cream, cubed cheese

Extra olive oil for rubbing the potatoes
【Method】
1. Cut baby tomatoes into smaller pieces; cut pepper sausages into small cubes and stir fried.(pic 1-2)
2. Cubed avocado and drizzled with lemon juice.(pic 3)
3. Slowly cut cooked potato into half, then using a spoon dig out the potato flesh slowly; becareful not to break the skin of the potato. (pic 4)
4. Drizzle olive oil all over the potato skin, sprinkle with some salt and bake for 25 minutes @ 180℃ or till skin is crispy.
5. Meanwhile mash the potato flesh with butter, salt, pepper and cream.(pic 5)
6. Fill up the cavity of the baked potato skin with the mashed potatoes. Sprinkle with the sautéed sausages and top with cheese.
Bake for 5 minutes or until cheese melts.(pic 6-7)
7. Remove from the oven, serve immediately topped with cubed cheese, avocado, baby tomatoes & sour cream.(pic 8)
